Mexican Style Meatloaf

Introduction

This meatloaf is also really great when made with ground turkey instead of beef.
If you like it spicy then use pepper jack cheese instead of the cheddar jack.

Number of Servings: 6

Ingredients

    20 oz of ground london broil
    1 cup crushed saltine crackers
    2 eggs
    2 tsp garlic, minced
    1 1/2 cup salsa
    1/2 cup salsa
    1 cup shredded cheddar jack cheese

Directions

Preheat oven to 375.
Combine ground meat with crushed crackers, eggs, garlic and 1 1/2 cups of the salsa.
Place half the meat mixture in a loaf pan.
Layer in the shredded cheese.
Layer in the other half of the meat mixture.
Top with the 1/2 cup of salsa.
Bake for 1 hour or until cooked through.

Makes 6 generous portions.
