Leftover Soup

Introduction

Threw together what I had in my kitchen! Threw together what I had in my kitchen!
Number of Servings: 2

Ingredients

    1 can enchilada sauce
    1 c vegetable broth
    1 can black beans
    1-2 yellow onions
    1 zucchini
    2 TB taco seasoning
    cooking spray

Directions

Saute onions with cooking spray and taco seasoning for five minutes. Add enchilada sauce, broth, black beans, and zucchini. Bring to a boil. Reduce heat and simmer on low heat for 15 minutes. Serve with lowfat sour cream or fat free yogurt. Makes two 1-cup servings.
