Diet Baked Apples

Introduction

I try to keep these on hand, but they go fast!
Low in calories, filling, and counts as a fruit serving!

Number of Servings: 5

Ingredients

    5 Baking Apples, large
    Diet Cherry or Raspberry Soda
    1 tsp Vanilla Extract
    1 serving of Sugar substitute
    1 Tbsp Cinnamon, ground

Directions

1. Core the apples and skin the upper 1/3 of each apple

2. Place upright in a baking dish

3. Pour in the Diet soda until 1/4 inch depth;
Add the vanilla extract

4. Sprinkle the cinnamon and sugar substitute into the apples

5. Bake at 375F for 35 to 45 minutes or until tender

makes 5 servings
