Chicken and Broccoli Comfort Bake

Introduction

I threw this together last night and it ended up being a hit with the family! It wasn't a beautiful presentation, but it sure hit the spot! I threw this together last night and it ended up being a hit with the family! It wasn't a beautiful presentation, but it sure hit the spot!

Ingredients

    Broccoli, 3 stalks (bite size pieces)
    Sour Cream, reduced fat, 1 cup
    *Campbell's Cream of Mushroom Soup (condensed), (reduced fat, one can)
    Parmesan Cheese, shredded, 10 tbsp
    Milk, nonfat, .5 cup
    Fresh Mushrooms, 1.5 cup
    Onions, raw, .50 cup, chopped
    Cooked Chicken Breast, no skin -- 1 breast, bone and skin removed

Directions

Preheat oven to 350 degrees.
Cut up broccoli in chunks and either boil or steam until almost done. (I boiled mine in chicken bullion)
Heat canola oil over medium heat. Add sliced mushrooms and chopped onions and cook in a saute pan until just tender.
Cut up two chicken breasts (already cooked). (keep separate until ready to mix)
Mix mushroom soup, sour cream and milk together. (keep separate until ready to mix)
Spray casserole dish with Pam.
Mix broccoli, mushrooms and onions together. (keep separate until ready to mix)
Layer chicken, broccoli mixture, mushroom/sour cream mixture and sprinkle with parmesan cheese. I do this twice, ending up with the parmesan on top.

I stirred this once, halfway through.

Bake for an hour. Mixture will be a little soupy.
