Beth's "Outback" Chopped Salad

Introduction

I love the chopped salad at the Outback so I tried to create a lower calorie version at home. I love the chopped salad at the Outback so I tried to create a lower calorie version at home.
Number of Servings: 1

Ingredients

    1/4 head iceburg lettuce
    1/2 whole tomato
    1 scallion
    1/2 peeled cucumber
    1/2 red pepper

    2 tbsp. slivered almonds
    1 oz. fat free feta cheese

    Dressing:
    1 tbsp. Ken's blue cheese dressing
    1 tbsp. Maple Grove Sugar Free Balsimic Vinaigrette dressing

Directions

Chopped vegetables very small into a bowl. Stir in fat free feta cheese and almonds. In a separate bowl mix the two dressings together. Pour dressing over salad and mix thoroughly. Makes one individual salad.
