Introduction

My youngest sons fought over a piece of okra from this dish when they were toddlers. Packed full of healthy delicious filling ingredients, it's a great side dish or add cooked lean meat for a complete meal.

I use fresh vegetables when they're available, otherwise substitute with canned or frozen.

Ingredients

    1 tbsp. extra virgin olive oil
    1 cup uncooked long grain brown rice
    2 cloves of garlic, minced
    4 cups low fat chicken broth
    .5 tbsp black pepper
    .5 tsp hot pepper sauce
    .5 cup chopped onion
    .5 cup chopped bell pepper
    1 cup diced tomatoes
    .5 tsp fresh or dried thyme leaves
    2 whole bay leaves
    2.5 cups sliced okra

Directions

Heat to boiling 2.5 cups of chicken broth (or one can plus enough water to equal 2.5 cups) in a large microwaveable bowl. Add the long grain brown rice & continue to microwave on high until tender. Whilte the rice is cooking, prep your vegetables.

Preheat non-stick skillet. Once hot, add olive oil, onions, green pepper, and garlic. Stir until onions are translucent. Add remaining ingredients including rice and chicken broth. Cover and cook for 20 minutes or until okra is tender.

Makes twelve 1/2 cup servings.
