TK: Mexican meatloaf

Introduction

4 points per slice 4 points per slice
Number of Servings: 12

Ingredients

    1 lb Ground Turkey
    1c TVP (reconstituted w/ 3/4c hot water)
    1c Bread crumbs
    2c Sweet Corn
    1 15oz Canned diced Tomatoes
    2 large eggs
    1c Salsa
    1T of each: garlic powder, onion powder, ground cmin, chili powder, ground chipolte pepper and cinnamon

    1 c 2% shedded mexican style cheese

Directions

Heat oven to 400. Spray 13x9 baking dish with cooking spray.

Reconstitute TVP with water and add remaining ingredients and mix well.

Place into 13x9 baking dish and cook for 30 minutes.

Top with cheese and return to oven until cheese is melted.
