Introduction

Number of Servings: 8

Ingredients

    # Chicken Breast, no skin, 2 breast, bone and skin removed
    # Baby Red Potatoes, 1.5 cup
    #Dried Red New Mexican Mild Chile Peppers 3 whole with seeds removed
    # Onions, raw, 1.2 medium (2-1/2" dia)
    # Carrots, raw, 1 cup, strips or slices
    #Olive Oil, 2 tbsp
    #Paprika, 2 tbsp
    # Salt, .6 tsp

Directions

Wash and separate breast pieces in covered baking dish.
Cut up chile pods and place around breasts.
Add 1/2 cup water to dish, cover and put in oven at 350 F.
Wash and cut potatoes into 1 inch cubes if larger.
Coarsely chop onion.
Slice carrots fine.
Heat olive oil in skillet and add vegetables.
Cook on high until onions caramelize.
Add to baking dish with paprika.
Cover and roast at 350 F for 50 minutes.
Open cover, cut up chicken breasts into shreds and chunks. Mix well with veggies and fluid.
Cook another 10 minutes and serve.
