Ingredients

1 tsp Olive oil
3/4 cup brown rice
Half medium onion, chopped
1.5 cups vegetable broth
1/4 cup raisins
Directions
Heat oil on medium heat in a small heavy pot with a tight lid. Saute onion until translucent. Add rice and stir until coated with oil. Add broth and raisins. Raise heat, bring to a boil, stir once. Turn down to low, cover, and simmer 45 minutes. Turn off heat and leave 15 minutes more. Stir and serve. Makes 3 1-cup servings.
