Cajun Fish

Number of Servings: 4

Ingredients

    4- 4 oz Orange Roughy Fillets
    1/8 t. white pepper
    1/8 t. oregano
    1/8 t. thyme
    1/8 t. paprika
    dash of red pepper
    2 T. Take Control Spread
    1 c. thinly sliced mushrooms
    1/4 c. green onions
    2 T. white wine
    1/2 c. beef stock

Directions

Combine all dry seasoning. Sprinkle on both sides of fish. In a large skillet over high heat, melt margarine until bubbly. Saute fish 1 minute or until turns brown. Add mushrooms and green onions and cook for another minute. Add wine and cook for 5 minutes or until fish flakes. Shake skillet often and add stock and cook for 3 minutes. Remove fish from skillet and place on plate. Over high heat continue reducing sauce until it reaches a thick consistency. Spoon sauce over fish.
