Chicken Sauce Piquant

Number of Servings: 6

Ingredients

    1 T. olive oil
    4 Chicken breasts(boneless)
    2 large onions
    1/4 c. chopped celery
    1/4 c. bell pepper
    2 cloves garlic
    3 T. all purpose flour
    1- 6 oz. can tomatoe sauce
    1 c. canned tomatoes
    1/8 t. basil
    1/8 t. red pepper & black pepper
    1/4 t. green onions
    3 T. parsley
    2 c. brown rice

Directions

Brown chicken in olive oil. Remove, brown chopped vegetables. Stir in flour and cook until brown stirring constantly. Do not let this scorch. Add tomatoes and tomatoe sauce,basil and peppers. Simmer on low covered for about 15 - 20 minutes. Add chicken and continue to cook for 30 minutes. Add green onions and parsley. Stir well to just mix in the green onions and parsley. Serve over rice.
