Chicken Taco Soup

Ingredients

    4-4oz skinless boneless chicken breast
    1 c. chopped onion
    1-4 oz. can chopped green chilies
    1 can hominy
    1 can pinto beans
    1 can kidney beans
    1 can black beans
    3 cans mild Rotel tomatoes
    1 pkg. taco seasoning mix
    2 T. dry ranch dressing mix
    2 c. water

Directions

Chop onions and brown in a sprayed pan. Add cubed chicken and saute with onions until onions are clear and chicken is golden. Add remaining ingredients and simmer for 1 hour. Serve with baked tostitoes or baked corn tortillias and reduced fat cheese.
