2- 4 oz.. Boneless Skinless Chicken Breast or Cut Broiler-fryer may be substittueted.
1/2 c. Lime Juice
1/2 c. Olive Oil
1 Tbs. onion flakes or grated fresh onion
2 tsp. Seson Salt or Salt-Free Ms. Dash
1/4 tsp. Black Pepper
1 large Ziploc Bag & Meat Mallet.
In oven broiler pan with rack in place, if using cut chicken pieces- place skin side down! Broil chicken about 8 in. from flame for 45-50 min. Turn pieces every 10 min. or so for cut chicken, monitor frequently if using skinless chicken as it will cook much faster!
Let cool slightly & may be served with a dollop of quacamole or sour cream & a sprinkle of Mex. shredded cheese! Just remember to allow for additional calories with the additional garnish!
