Chicken Piccata

Ingredients

    1 1/2 lbs. chicken breast, scallopine
    1 tbsp. wheat flour
    1/4 cup soy flour
    1/4 cup lemon juice
    1/4 cup white wine
    1/4 cup chicken broth
    1/4 tsp. corn starch
    5 tbsp. butter
    capers, to taste

Directions

Pound chicken breast flat (or use chicken scallopine that has already been pounded). Mix soy and wheat flours in a shallow bowl and season to taste with salt and pepper. Dredge chicken pieces in flour mixture. Pre-heat a shallow non-stick skillet and pan-fry the chicken pieces until almost done (about 10-12 minutes depending on thickness). Remove chicken from the pan. Stir in lemon juice, wine and broth and deglaze pan stirring up brown bits. Return chicken to pan and let sauce simmer and reduce slightly. Remove chicken and place on serving plate. To finish sauce, remove 1 tsp. of liquid and stir into cornstarch until smooth. Whisk butter into sauce, in pieces, until sauce is slightly creamy. Add cornstarch to sauce and heat until thickened. Stir in capers, if desired. Pour over chicken and garnish with chopped fresh parsley.
