1/2 cup canola oil
2 tablespoons lemon juice
1/4 cup apple cider vinegar
1 tablespoon sugar
3 teaspoons fresh basil, chopped
salt and pepper, to taste
2 mangos diced
1 medium red onion, chopped
2 medium zucchini squash, quartered and sliced
2 medium summer squash, quartered and sliced
2. Prepare the mango, and toss into the dressing above to coat
3. Add the onion, squash, and zucchini; toss again.
4. Cover and chill for at least an hour, preferably over-night.
5. Before serving re-toss and check seasoning.
