Dijon-Roasted New Potatoes

Introduction

Coating the potatoes in Dijon mustard and a little olive oil makes them crispy on the outside and tender on the inside. Yum! Coating the potatoes in Dijon mustard and a little olive oil makes them crispy on the outside and tender on the inside. Yum!
Number of Servings: 4

Ingredients

    1.5 pounds uncooked new potatoes, quartered
    1 Tbsp Olive Oil
    2 Tbsp Dijon Mustard
    .75 tsp Paprika
    .25 tsp dried thyme
    .5 tsp salt
    .25 tsp black pepper

Directions

Coat a 9"x13" baking pan with cooking spray, and heat oven to 425F.

Whisk together oil, mustard, paprika, thyme, salt and pepper in a large bowl. Add quartered small potatoes and stir til they are coated.

Put potatoes in baking dish and roast 15 minutes. Stir and roast another 15 minutes.
