HJ Potato Salad

Ingredients

    9 c. diced potatoes
    1/2 c. light mayo
    1.5 T dijon mustard
    1 tsp garlic
    1 T parsley
    1/2 T onion powder
    2 T pimientos
    1/ 2c. diced celery
    Salt to taste

    1.5 hard boiled eggs
    Paprika

Directions

Boil potatoes until tender, approx. 10 minutes. Combine all ingredients except eggs and paprika. Slice eggs and arrange on top, then sprinkle with paprika. Serve warm or chilled.
