Fruit and Ricotta breakfast

Introduction

You could use non-fat ricotta and reduce the fat or a smaller banana and reduce the calories, but I was working with what I had so my fruit wouldn't go bad. Ingredients

    1/2 cup part skim ricotta cheese
    1 tsp McCormick imitation coconut extract (optional)
    1/2 cup fresh blueberries
    1 medium banana
    1 cup del monte naturals fruit cocktail

Directions

measure out ricotta into a bowl and add coconut extract
split mixed ricotta into 2 bowls, making a small rounded mound in the middle of each bowl (I used cereal bowls)
add 1/4 cup blueberries to each bowl (I lightly pressed the berries into the ricotta so the mound was covered in berries)
slice banana and split slices between bowls, I set the slices up against each mound
add 1/2 cup fruit cocktail around the outside of the banana slices, saving the juice and one cherry
pour juice over blueberry covered ricotta and put the cherry on top
makes 2 servings
