Ethiopian Chickpea Sauce

Introduction

This is an easy to make side dish which goes well with stirfried meat and tortilla. Traditionally it is eaten with Injera, a kind of Ethiopian Tortilla This is an easy to make side dish which goes well with stirfried meat and tortilla. Number of Servings: 4

Ingredients

    1 can of chickpeas
    1 medium Tomato
    1 small onion
    1 Tbsp Sunflower Oil
    .5 tsp dried parsley
    1 dash salt
    1 dash black pepper
    add water if needed

Directions

Heat the oil in a cooking pot, cut onions & tomato in small cubes, saute the onions. Then add the tomato and fry them. Drain the water of the canned chickpeas into a cup, then pour chickpeas into the cooking pot with onions & tomatos, add the spices. Add a little from the chickpea water and boil for a few minutes.
Put into a blender and blend at high speed, add the rest of the chickpea water if needed.
It should be a thick creamy sauce.

Serves 4
Serve with stir-fry meat and tortilla or traditional Ethiopian Injera
