Grilled Chicken Cordon Bleu

Introduction

This was taken from the Weight Watchers "Grill It Cookbook". This was taken from the Weight Watchers "Grill It Cookbook".
Number of Servings: 4

Ingredients

    4 (1/4 lb) skinless, boneless chicken breasts
    2 tsp olive oil
    1/8 tsp salt
    1/4 tsp ground pepper
    2 tsp dijon mustard
    1/4 lb deli-sliced ham (4 slices)
    2 oz thinly sliced swiss cheese (4 slices)

Directions

Spray the grill rack with nonstick spray; prepare the grill for a medium hot fire using the direct method.

Rub the chicken with oil, then sprinkle with salt and pepper, place the chicken on the grill rack and let grill 4 minutes. Turn the chicken and brush each breast half with 1/2 tsp of the mustard. Top each with 1 slice of the ham and 1 slice of the cheese. Cover the grill and grill until the ham is hot, the cheese is melted and of course the chicken is cooked through.

Tip: Try serving the chicken with grilled veggies such as zucchini and yellow squash, sprinkled with a fresh squeeze of lemon.
