Protein Pancakes
Submitted by: PHITNPHATIntroduction
These are the protein pancakes I make and travel with. They keep in a baggie well, can be topped with sugar free syrup and berries or ate alone. Good for a snack or with an omelette for breakfast. Ingredients
-
2 scoops of Lean Dessert (flavor of choice)
2 dry cups of oat bran hot cereal
6 egg whites or half small carton
2 packets of splenda if you like them extra sweet
1 tsp of baking powder
Directions
Mix your ingredients in a bowl. Some people have better luck using a mixer but I haven't had a problem.
Get a frying pan at medium high heat and spray with non-stick or use a touch of oil. Pour batter into pan - about the size of your fist. Cook them slow and watch for bubbles. Once you see bubbles, carefully flip and cook the other side.
Allow to cool and bag for snacks or serve for breakfast. I find this is about 3 servings.
