Healthy Spicy Banana Bread Muffins

Introduction

Yummy 115 calorie alternative to high-fat /calorie muffins. I added flax seed for an extra boost of Omega-3 fatty acids, and a little oil to help keep it from being too spongey (like so many low-fat muffins have.) You can use less (or more cinnamon/spices as you choose.) Makes 12 muffins or one loaf. (I like the muffins, so you can make sure you know your exact calories.) Ingredients

    2 eggs
    1/3 cup honey
    3 small bananas (mashed)
    1/4 cup applesauce
    1/3 cup 2% milk
    1 TBS oil
    1 TBS vanilla
    1 3/4 cup whole wheat, unbleached flour
    2 Tsp Baking powder
    1/2 tsp Baking Soda
    1/2 tsp salt
    1 TBS Cinnamon
    1 tsp Pumpkin Pie Spice
    2 TBS Flax Seed Meal

Directions

Preheat oven to 325 degrees F (165 degrees C). Spray a bread pan with non-stick cooking spray, and lightly dust with flour. (If using muffin tins, do the same, or add paper liners.)

Mash bananas at the bottom of a large mixing bowl. Mix in the rest of the wet ingredients. When they are all mixed, add the spices and flax seed. Add in the dry ingredients and mix well, but not too much to avoid "gummy" muffins.

Pour batter, as evenly as possibly into 12 muffin molds.

Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
