Parmesan Chicken Breasts

Introduction

Very moist and great left overs.
May substitue Chicken Tenders in place of the Breasts

Number of Servings: 4

Ingredients

    2 Lg. Boneless Chicken Breasts, no skin,
    2 Tbls. Canola Oil
    1 Cup Parmesan Cheese, grated
    2 Eggs, whites only, beaten til frothy

Directions

1. Divide Chicken Breasts in half
2. Pound the Breasts with a weigh until Chicken is all the same thickness.
3. Dip both sides of the Chicken through the Egg Whites.
4. Then in the Parmesian Cheese.
5. In a skellet add the Oil and bring to a medium heat.
6. Saute the Chicken in the Oil till cooked through and nicely browned.
