Onion and Mushroom Quiche

Introduction

This quiche is simple and delisous, It is one of dishes my husband requests the most. This quiche is simple and delisous, It is one of dishes my husband requests the most.
Number of Servings: 6

Ingredients

    1 tbsp. Olive oil
    2 medium onions cut into long thin matchstick strips
    .5 cup fresh mushrooms sliced
    3 cloves garlic chopped
    4 lg eggs
    1/2 cup sour cream
    1/4 cup milk
    1/2 cup Cheeder Cheese
    Dried chillied peppers (optional)
    Salt and pepper to taste

Directions

1. Preheat oven to 375
2. Prebake pie crust for 7-10 min.
3. Sautee onion, once they start to brown add the garlic and mushrooms.
4. whisk sour cream, milk, and eggs until smooth (works best if sour cream and milk are mixed first and then eggs are added)
5. Add onion, mushrooms, garlic, and cheader cheese to the egg mixture and stir briefly
6. Pour into pie crust
7. Sprinkle parmesan cheese evenly over the top
8. Bake at 375 for 25-30 mins - quiche is done when knife inserted in the center comes out clean.
Serves 6-8 (calorie info calculated for 8 servings)
To reduce the calories/fat even more:
- use reduced fat cheese
- Don't use cheese at all
- Don't use a pie crust, just spray the pie dish with a nonstick cooking spray.
Enjoy!

Use this as a basic quiche recipe and substitute the vegetables you enjoy (bell peppers, spinich ect), you can also add a tin of tuna to bulk it out for a full meal.
