8-10 ripe tomatos, different colors, varieties
1 pillsbury pie crust
1 oz. reduced fat feta cheese crumbles (~1/4 c.)
1.5 oz herbed chevre, crumbled (~1/4 c.)
1 oz. shredded parmesan (~1/4 c.)
3/4 c. julienned fresh basil
Layer tomatoes in pie crust, alternating with basil.
Sprinkle cheeses evenly over top.
Bake for 1 hour at 350 degrees.
You may have to drain liquids (carefully!) into the sink before serving.
