Slow Cooker Beef Roast with Cranberry and Red Wine Reduction

Introduction

This roast is delicious and melts in your mouth and best of all, it does not have too many calories! I usually serve this with a side of grilled veggies. Ingredients

    2 big onions, sliced
    3/4 tsp black pepper
    3/4 tsp dried rosemary
    1/4 tsp cayenne pepper
    1 Pot roast (about 4 pounds/2kg)
    3/4 cup red wine
    1/2 cup beef broth
    1/2 cup cranberry frozen cocktail concentrate (do not add water!) unfrozen
    1/4 cup reduced sodium soy sauce
    4 garlic cloves
    1/4 cup flour
    1/3 cup water

Directions

1. Put the sliced onions in a big bowl. In another small bowl, mix together pepper, rosemary and cayenne pepper. Brush the roast on all sides with spice mix. Put roast on the onions.

2. In another bowl, mix together red wine, beef broth, unfrozen cranberry cocktail concentrate, soy sauce and garlic. Pour on roast. Cover and put in fridge for 12 hours (overnight).

3. In the morning, put the onions and sauce at bottom of crock pot and put roast on top. Cover and cook for 12 hours on LOW setting.

4. Remove roast, put in plate and cover with aluminum sheet, let stand 10 minutes. During this time, thicken sauce with flour/water mix.

5. Cut roast in 10 slices and cover with now thickened sauce and onions.

Serve with vegetables.

    Instead of cranberry cocktail, I added more liquid (mostly wine) and put in a cup of dried cranberries. Fresh would work as well. Very savoury. I used reg. soy sauce. 12 hours definitely too long--will try 4-5 next time. - 3/16/13

  • Love it! No bland roast here! I use the low sodium soy sauce the 2nd time around. Onions don't agree with me too much, although I like the flavor and health benefits of them. I cooked with them, but removed them after a couple of hours. It was wonderful, and even more tender the 2nd day. - 1/22/12

  • very tasty pot roast, and I'm no fan of pot roasts! Husband loved it and the gravy. I had a 6 lb chuck roast and cooked it for 10 hrs on low--perfect! I would be careful about a smaller roast cooking for a longer time. - 8/3/10

  • I made this for Easter dinner today. I cooked it on low for 10 hours instead of 12 and it was still cooked too much. It tasted pretty good but it would be a lot better if cooked on low maybe for only 6 to 8 hours. - 4/4/10

    4 tablespoons beef bouillon (or sub beef broth for the water and omit bouillon if you want to avoid MSG), 4 tsps balsamic vinegar, 2 tsps dark molasses, 1/4 tsp ground ginger, a dash each pepper and garlic powder, 1 1/2 cups water...bring all ingredients to a boil and reduce to 1 cup. - 3/16/09

  • I only used one onion and didn't use the cayenne pepper.Very good! Melts in your mouth.The smell of it cooking ( in the crock pot ) when you get home will make you hurry up diner. - 1/23/09

  • My entire family loved this including my very picky two year old. Very easy to make, you just need to plan ahead as the roast sits in the broth overnight. The next morning, put in the crock pot and cook all day. Great when you are busy. This is definitely a keeper. - 10/3/08
