1/3 cup dry Quinoa and 2/3 cup water
1 cup chopped Broccoli
1 cup chopped Spinach
.5 cup chopped Onion
1 chopped medium tomato
1 clove garlic
.5 tsp evoo
salt and pepper to taste
saute onions and minced garlic in oil
once quinoa is done cooking (all water absorbed)
add broccoli, spinach tomato and onion/garlic saute. Cover with lid and put over medium heat so juice from tomato can steam broccoli and spinach.
Makes approx : 4 1 cup servings.
