Lynns banana muffins

Introduction

yummy little muffins that my kids like for breakfast or a snack yummy little muffins that my kids like for breakfast or a snack
Number of Servings: 12

Ingredients

    2 cups flour
    1tsp baking powder
    1 tsp baking soda
    pinch of salt
    .5 tsp ground cinnamon
    .5 tsp grated nutmeg
    3 large ripe bananas
    1 egg
    .25 cup brown sugar
    .25 cup vegetable oil
    .5 cup raisins (optional-not included)

Directions

preheat oven to 375. grease 12 muffin tins or use paper liners.

sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.

With an electric mixer, mash the peeled bananas at med speed.

Beat egg, sugar and oil into mashed bananas.

Add dry ingredients and beat in gradually on low speed. Mix until just blended.

If using raisins, use a wooden spoon to stir in the raisins until just combined. Spoon the mixture into the muffin tins. Fill them 2/3 full.

Bake for 20-25 min, until the tops spring back when touched lightly.

Cool on wire rack before serving.
