Citrus Grilled Turkey with Mango Pepper Salsa

Introduction

You can prepare the marinade and the salsa the night before the meal. You will only need to grill the turkey and cook up some rice for a yummy and nutritious meal! Number of Servings: 4

Ingredients

    16 oz turkey breast cutlets (4 cutlets @ 4 oz. each)
    juice & zest of 1 lemon
    juice & zest of 1 lime
    juice & zest of 1 small orange
    2 tsp. garlic powder
    1 Tbsp olive oil
    0.5 C chopped onion
    1 small red bell pepper, chopped, seeds & pith removed
    1 small yellow bell pepper, chopped, seeds & pith removed
    1 small green bell pepper, chopped, seeds & pith removed
    1 C chopped mango (may use frozen or fresh)
    1 jalapeno pepper, chopped, seeds & pith removed (optional)
    1 Tbsp cider or wine vinegar

Directions

Place turkey breast cutlets into a small pan to marinate. Mix citrus juices, zests, and garlic powder together and pour over turkey. Marinate at least 2 hours or overnight. Heat olive oil in a non-stick skillet. Saute onions until transluscent, add peppers and cook an additional 1 minute (peppers should be crisp tender). Remove from heat and let cool in a bowl. Mix in the mango, jalapeno, and vinegar. Chill at least one hour. Heat grill and remove turkey from marinade. Grill turkey until just done (no pink) DO NOT overcook! Place on plate and serve with a few spoonfuls of mango pepper salsa and a side of brown rice.
