This is an easy delicious vegetarian recipe, which can also be adapted as a topping for fish, like cod or tilapia and/or chicken breasts. Makes a great TLT (tofu, lettuce, and tomato) sandwich too! Ingredients

1 block of extra-firm tofu, well-drained
Hellmann's Dijonnaise and/or low-fat/light mayo

Topping mixture as follows:
Panko crumbs (unseasoned)
Parmesan cheese
Salt-free seasoning mixture
Note: To save time, prepare the topping mixture ahead and keep it in the fridge in a Parmesan cheese shaker.
Directions
After draining a container of extra-firm tofu, slice the tofu block lengthwise (still shaped like a thin deck of cards), spread thinly with low-fat/light mayo and/or dijonnaise; then sprinkle the slices with a combination of panko crumbs, parmesan cheese, and salt-free seasoning mixture. Place the tofu slices under the broiler (low setting) in the toaster oven or counter-top convection oven. Just watch it closely so that it does not burn. Enjoy!
Makes about 4-5 servings/slices of broiled tofu.
