Butterfly Life Beef Enchiladas

Introduction

Number of Servings: 6

Ingredients

    1/2 cup chopped onion
    1/2 cup chopped carrot
    2 cups chopped green or red bell pepper
    1 pound extra lean ground beef
    4 ounce can green chilies (optional)
    1/2 teaspoon oregano
    salt and pepper to taste
    3 cups tomato sauce
    6 8-inch flour tortillas
    1 ounce sharp cheddar, grated
    1/2 cup chopped fresh cilantro (optional)

Directions

Preheat oven to 350.

Coat a large nonstick skillet with vegetable spray. Saute the onion, carrot and bell pepper. Add 2 tablespoons of water, cover and simmer for 5 minutes or until tender. Add the ground beef and saute until crumbled and partially cooked. Add the green chilies, oregano and tomato paste. Season to taste with salt and pepper. Simmer uncovered for 5 minutes until thick.

Spoon 1 cup tomato sauce in bottom of baking dish large enough to accommodate the enchiladas. Divide the beef and vegetable mixture in center of tortillas and roll up. Place tortillas, seam side down, in the baking dish and cover with remaining sauce. Top with cheese. Cover and bake for 20-25 minutes until hot. Sprinkle with cilantro.

Serves 6.
