Cream of Mushroom Soup (Entire Can)

Introduction

This is a recipe meant to replace one can of cream of mushroom soup. It does have less sodium than a can, and I suppose with a little tweaking, you could use fresh mushrooms to reduce the sodium to very little. You could also make cream of celery soup by omitting the mushrooms and adding celery. This is a recipe meant to replace one can of cream of mushroom soup. Ingredients

    2 cans murshrooms, drained- liquid reserved
    1/4 cup light butter
    2 tbls. chopped onion
    1/4 cup flour
    1 can fat free evaporated milk
    water

Directions

Chop mushrooms. Add water to mushroom liquid to make 2 cups. Melt butter in large saucepan over medium heat. Add onion; cook for 1-2 minutes or until tender. Remove from heat. Stir in flour; return to heat. Stir in mushroom liquid mixture, evaporated milk and mushrooms. Cook over medium heat, stirring constantly until mixture comes just to a boil. Soup may be frozen or canned, or used immediately.
