Ingredients

    1 Thomas' Hearty Grains Whole Wheat English Muffin
    1/2 cup sliced baby bella mushrooms
    1/4 cup fat free shredded mozzarella cheese
    1 serving firm tofu , sliced into two slices
    Pam cooking spray

Directions

Preheat oven to 425.
Line a small cookie sheet with foil. Spray foil with Pam .
Place each half of the English muffin on the foil.
Add a slice of tofu on top of each muffin half.
Put 1/4 cup of mushroom slices on top of each of the tofu slices.
Top each half with 1/8 cup of the cheese.
Bake for about 15 minutes until heated through and cheese is somewhat melted. (fat free cheese does not melt like regular cheese).
Makes 1 serving
