Pollo Fundido Tacos Dinner

Introduction

This is the whole meal...each person gets 3 polo fundido tacos with 1.5 cups of cooked basmati rice. So delicious...even includes salsa and sour cream on top...It's indulgent but worth it :) This is the whole meal...each person gets 3 polo fundido tacos with 1.5 cups of cooked basmati rice. So delicious...even includes salsa and sour cream on top...It's indulgent but worth it :)

Ingredients

    6 White corn tortillas
    2 Chicken breasts (boneless, skinless)
    3 Tbsps Salsa
    1 small can diced green chiles
    3 oz. fat free cream cheese
    2 Tbsp fat free sour cream
    3 cups cooked basmati rice
    shredded lettuce

Directions

Boil chicken breasts until done. Set aside. Once cool shred. In a bowl, mix together cream cheese, green chiles, 1 Tbsp salsa, and 1 Tbsp sour cream. Put oil into sautee pan and add chicken and sauce mixture. Heat through. Spoon mixture evenly into taco shells, add shredded lettuce, and a small amount of cheese to each one. Serve with 1-1.5 cups of rice and 1 Tbsp each of Sour Cream and Salsa on the side.
Makes a large dinner for 2 (3 Tacos with 1.5 Cups of rice per person) or a medium sized dinner for 3 (2 Tacos with 1 cup of rice per person)
