Ingredients

    1 Cup uncooked lentils
    4 cups veggie stock
    1 diced onion
    1 clove garlic
    1 large can chopped/diced/crushed tomatoes (whatever you have on hand)

Directions

Rinse lentils first. Put all ingredients in a large cooking pot. Bring liquid to a boil. Cover and simmer for 23-30 minutes. Makes a great take to work lunch!
