Ingredients

    1/2 cup butter, melted
    1 cup sugar
    2 eggs (egg substitute)
    1 cup mashed ripe bananas
    1/4 cup nonfat milk
    1 tsp. vanilla
    1 cup white flour
    1 cup whole wheat flour
    1/4 cup cocoa
    1 tsp. salt
    1 tsp. baking soda
    1/2 cup nuts, chopped optional

Directions

In a mixing bowl, cream butter and sugar. Add eggs, bananas, milk and vanilla. Combine the flour, cocoa, soda and salt; add to the banana mixture and mix just until combined. Fold in nuts, if desired. Transfer to a 9 x 5 x 3 loaf pan sprayed with cooking spray. Bake at 350 degrees for 60-65 minutes. Makes 8 servings.
