Red Beans and Rice

Introduction

This is very easy to make, and you control the sodium! The fiber content in these beans is phenomenal!!! This is very easy to make, and you control the sodium! The fiber content in these beans is phenomenal!!!
Number of Servings: 8

Ingredients

    16 oz. bag dry small red beans
    1/4 tsp. ground thyme
    1 can Rotel
    1 medium onion, chopped
    1 green pepper, chopped
    dash of baking soda
    dash of salt
    2 cups dry rice

Directions

Soak beans overnight in enough water to cover. Rinse, drain and cover with water in a stock pot. Add all ingredients and bring to a boil. Cover, reduce heat and simmer for 4-5 hours. You can also transfer to a crock pot for simmering.

You can also add any type of sausage you prefer. I like the hot links or cheddar links.

Serve over 1/2 cup rice.

Makes about 8 3/4 cup servings.
