Chicken & Broccoli Alfredo

Introduction

I made a few changes to a favorite Campbell's recipe. Please don't use frozen chicken breasts as it will cause a higher sodium content in this recipe. Number of Servings: 4

Ingredients

    ½ of a 16 oz pkg of whole wheat linguine
    1 cup fresh or frozen flowerets
    2 Tbsp Smart Balance Light
    *1 lb boneless, skinless chicken breasts, cut into 1.5 inch pieces
    10¾oz can Campbell's Healthy Request Cream of Mushroom Soup
    ½ cup fat free half and half
    ½ cup grated Parmesan cheese
    ¼ tsp ground black pepper

    *You may also substitute 1 lb of shelled and deveined large shrimp for the chicken. Calories will be 375.5/serv

    EXTRA NOTE: Try grilling the chicken breast before chunking. Tastes even better!

Directions

Prepare linguine according to package directions in a 3-qt saucepan. Add broccoli druing last 4 minutes of cooking time. Drain linguine and broccoli well in colander.
Heat butter in 10" skillet over medium high heat. Add chicken and cook unil well browned, stirring often.
Stir soup, half and half, cheese, black pepper and linguine mixture into skillet. Cook until mixture is hot and bubbling. Serve with additional Parmesan cheese.
