April's Oatmeal Blueberry Bars

Introduction

I was looking for a yummy oatmeal bar recipe that is low sodium (for my boyfriend's "heart healthy" diet), but nothing appealed to me, so this is what I came up with. I was looking for a yummy oatmeal bar recipe that is low sodium (for my boyfriend's "heart healthy" diet), but nothing appealed to me, so this is what I came up with.
Number of Servings: 12

Ingredients

    1 cup brown sugar
    1/2 stick butter
    1 egg
    1 tsp vanilla extract
    1 cup apple sauce
    1 cup flour
    1 tsp baking powder
    2 1/3 cup oats
    1 cup frozen blueberries

Directions

Preheat over to 325 degrees. Mix brown sugar and butter. Add egg and vanilla and mix well. Add apple sauce and mix. Add flour and baking powder, and mix. Mix in oats and blueberries. Spray a 6x10 baking dish with cooking spray, and pour in mixture. Bake 30 minutes, or until done (insert a toothpick and make sure it comes out clean). Cool, then cut into bars. Makes 12 moist and chewy bars.
