Stuffed Pepper Soup

Ingredients

    16 oz 93% ground turkey
    1 large green pepper, chopped
    1 medium onion, chopped
    2 garlic cloves, minced
    28oz can of tomato sauce
    15oz can of petite diced tomatoes
    1T salt free steak seasoning
    1T oregano, dried
    1T basil, dried
    1T black pepper
    4C fat free beef broth
    4C water
    1/2C long grain brown rice

Directions

In a non stick skillet brown turkey. When turkey is cooked through add peppers, onions & garlic. When peppers & onions are all other ingredients except the rice. Bring to a boil and then add rice. Let simmer for 20 minutes or until rice is tender.

Makes 8 HEARTY 1C servings.
