Southwest Crockpot Chicken

Introduction

This is an incredibly filling 'stew' that even my pickiest eater loves! So easy and low-cost as well as low-cal! This is an incredibly filling 'stew' that even my pickiest eater loves! So easy and low-cost as well as low-cal!
Number of Servings: 10

Ingredients

    1 package chicken thighs (boneless, skinless; approximately 10 pieces), cut into bite-size pieces (for easy cutting, partially thaw frozen meat then chop)
    1 24 oz can of Garlic Lovers Salsa (I use Safeway Select)
    2 cans black beans, drained
    2 cans yellow corn, drained
    approximately 1/4 cup taco seasoning (12 tsp)
    * small bunch of cilantro, finely chopped (optional)

Directions

Place chicken in crockpot, then pour remaining ingredients over chicken. Cook on high for 4 hours or on low for 6 hours.

Makes 10 1cup servings.

Excellent with a dollop of low-fat sour cream on top!
