Chicken Fajita Burger

Introduction

I got this idea from Rachael Ray, originally. I prefer to eat burgers, protein style, without the bun, though. It's a fast dinner that is really satisfying.

Number of Servings: 3

Ingredients

    1 pound lean ground chicken
    1 large onion, divided
    1 red bell pepper, thinly sliced
    1 Tbsp olive oil
    SEASONING (I don't measure as a rule):
    1 Tbsp. Montreal Steak Seasoning
    1 tsp. Chipotle Chili Powder
    1 tsp. ground cumin
    1/2 onion, grated
    generous dash of tobasco sauce
    1 jalapeno (finely minced, optional)




Directions

Slice onion in half.
Split one half and grate into the ground chicken.
Slice remaining onion thinly.
Slice bell pepper into thin strips.

To chicken add:
Grated onion
Seasoning and spices
Tabasco sauce
Jalapeno (optional)

In a non-stick skillet, heat olive oil and add sliced onion and bell pepper. Saute for about 10 minutes or longer, until onion is lightly caramelized.

Form burger patties- one pound yields about a 5 oz. burger.

Grill until cooked to 160F, about 10 minutes.

To serve, you can add a dollop of light sour cream (nutrition not factored in for this)
and cover with cooked onions and bell pepper.

Garnish with some fresh chopped cilantro, if desired.

NOTE: Sometimes I add fresh lime juice and chopped cilantro to light sour cream (or Greek yogurt) as a flavored topping.
