Asparagus and Chicken stirfry

Ingredients

    2.2 pound chicken breast
    1 tbsp olive oil
    dash of salt
    2 tbsp soy sauce
    2 tbsp minced garlic
    6 cups of sliced asparagus
    1 cup chicken broth devided
    2 tbsp corn starch
    1 cup slice into halves- cherry tomatoes
    1 tbsp paprika

Directions

Heat olive oil and then add in cubed chicken breast and stirfry for about 3 minutes adding th soy sauce and paprika.
Add asparagus and then add 1/2 cup of the broth.
Cover for 4 minutes.
Meanwhile add cornstarch in to remaining broth then add in the mixture the tomatoes.
Pour all that into the skillet.
Add garlic and stir over low flame until it's all thick.
Serve hot.

  • This was ok - I found the sauce a bit bland, and the selection of veggies is a bit boring for me, so I added some mushrooms and yellow peppers, which helped a bit, but I don't think i'd make it again. Hubby liked it! - 11/6/08
