Shannon's Quick & Easy BBQ Chicken

Submitted by: ONESWEETSHANNON

Introduction

This is my go-to dinner for night's when I just don't have a lot of time, and it's one of my husband's favorites. You can substitute boneless pork sirloin chops for the chicken. I like topping mine with some chopped dill pickle. This is my go-to dinner for night's when I just don't have a lot of time, and it's one of my husband's favorites. Ingredients

    2 Tablespoons Canola Oil
1 1/2 lbs boneless, skinless chicken breast (We like using breast tenderloins)
1 Cup of your favorite BBQ Sauce
1/4 Cup fat-free Italian salad dressing
    Salt and pepper
    Garlic Powder (optional)

Directions

Heat oil in large skillet on high.

Season chicken or pork with garlic powder, salt and pepper. Add chicken to the pan and season the other side.

Heat chicken for four minutes or until lightly browned.

While chicken is cooking, stir together the barbeque sauce and fat-free italian dressing.

Turn the chicken and heat for one minute longer. Add the sauce mixture. Cover and reduce heat to medium.

Cook for 3 more minutes and remove the chicken to a plate.

Continue to heat the remaining sauce in the pan, reducing to a thick bubbly mixture, about a minute or two longer. Serve reduced sauce on top of chicken or pork.

Makes 6 servings of 4 ounces of chicken plus sauce.
