Ingredients

2 cups shredded carrots
1 cup raisins
1 cup low-fat, plain yogurt
dash cinnamon, if desired
Directions
Shred 2 cups of washed carrots in to a large bowl. Add 1 cup of raisins and 1 cup of low-fat, plain yogurt. Add cinnamon, if desired. Mix well. Cover and refrigerate. The salad and raisins will soften in the yogurt after a few hours. Best if prepared and chilled ahead of time.
