2 # or 8 C. yellow or zucchini squash
1 C. onion chopped
1-8 oz. carton light sour cream
1-4 oz. can green chilies
1-2 oz. jar pimiento, drained
2 C. monterey jack cheese
3 C. cheese flavored tortilla chips, crushed
Combine squash and onion. Cook until tender, about 8 minutes.
Stir together sour cream, chili peppers and pimiento. Fold in cheese.
In a 9 by 13 inch glass baking dish layer half of the squash mixture, half of the cheese mixture, then half of the chips. Repeat layers once more.
Sprinkle with paprika. Bake about 25 minutes.
