Apple-Cinnamon Oat Muffins

Number of Servings: 12

Ingredients

    1/2 c. flour
    1 c. whole wheat flour
    1/4 c. ground flaxseed
    1 tsp. baking soda
    1 1/2 tsp. baking powder
    1 tsp. cinnamon
    1 tsp. nutmeg
    1 egg, beaten
    4 Tbsp. canola oil
    1/3 c. applesauce
    1/4 c. sugar
    1/4 c. chopped pecans
    1/3 cup nonfat milk

Directions

Mix dry ingredients together (through nutmeg) in a large bowl.
Mix egg and oil until smooth. Then, add applesauce, sugar, and milk. Add wet mixture to dry mixture. Finally, fold in pecans.
Spray Pam on muffin pan. Fill all twelve cups.
Bake in preheated 350 degree oven for 22 minutes. Let cool for 5 minutes on cooling rack.

Makes 12 servings.
