Ingredients

    1 link Johnsonville Andouille Sausage, diced
    1 TBS Enova Oil
    !/2 onion, diced
    1/4 each red, yellow and green pepper, chopped
    1 can Bush's black-eyed peas
    1 can dice tomatoes, with italian spices
    2 cans beef broth
    3 carrots, chopped
    1tbs dried oregano
    1tsp dried basil
    1 tbs dried parsley
    tsp garlic powder
    1 tsp cayenne pepper


Directions

Saute sausage and onion in the oil for 2 minutes. Add the carrots and peppers and saute a few more minutes, then add broth, peas, tomatoes ad all the spices and simmer for 15 to 20 minutes.
