IntroductionLentil soup with a kick. I use Rotel stewed tomatoes with peppers to give it a kick. I also don't add an additional oils. Lentil soup with a kick. I use Rotel stewed tomatoes with peppers to give it a kick. I also don't add an additional oils.
2 cups of cooked Lentils
1 can of Rotel or stewed tomatoes (add peppers)
1 cup of water
1 cup of chopped carrots
1/2 a chopped onion (or 2 Tbl. onion flakes)
1 tsp of garlic powder (or actual clove)
1 tsp of favorite soup spice (I use McNess Soup pot)
1 tsp of salt (or salt to taste)
Make lentils prior to recipe with crock pot recipe (3x as much water to lentils on high overnight. I freeze leftover lentils for other recipes.
Add the ingredients to crock pot. Cook on high for approx. four hours. Occasionally stir to avoid brownish colored carrots (doesn't bother me). Stir and add more spice if desired.
