Chinook Salmon, 16 oz
Parsley, 1 cup
Onions, raw, 1.5 cup, chopped (Walla Walla sweet)
1.5 cup cherry tomatoes
Cucumber (peeled), 1.25 cup chopped
Fresh Chives, 4 tbsp chopped
Hellmann's Dijonnaise, 10 tsp
Lemon pepper, sea salt, garlic powder, onion powder to taste
Chop your onion, cucumber, half the cherry or grape tomatoes, chop the chives into a large bowl, flake you salmon on top add spices to taste, add djionnaise stir well and chill.
I like to eat this on 7 grain lite Wasa crackers but it can be a main lunch salad, sandwich filling or serve with cracker of your choice.
